Started to use habenaro peppers in a number of dishes. I was always under the impression they were nuclear...not true. They have a wonderful fruity taste that I really like. Of course you need to de-vain them and remove seeds if you don't want to catch on fire. Made some habenaro mango sauce that is really good. The heat come about 20 seconds after the taste...perfect! At $10/lb they are pricey but a little goes a long ways.
