Boiled Turkey???
I am a very accomplished cook and bbq guru (pats self on back). I normally make my turkeys on my grill (Big Green Egg) with generally excellent results. However, ever since seeing a restaurant famous for its turkey sandwiches boil their turkeys on Diners, Drive-ins, and Dives I have been curious. I am also amazed how tender the meat is when I boil a carcass afterwards for turkey soup. Anyone with experience here?

I can about 4 turkeys every fall. This process is basically boiling it. It's great to open up a jar of canned turkey for sandwiches, fajitas, or for making hot turkey sandwiches.
You're correct. The meat ends up being very tender and delicious.
Canning meat is fun. I usually can a good portion of the deer I kill as well.

I pressure can chicken breast often as part of my WTSHTF supplies. It is delicious but it is placed in the jars butt naked and raw.

I have over smoked turkey before and it was nothing but nasty. I might use a very light amount of apple or cherry chips now but generally don't care for too much smoke with turkey. I used to buy smoked turkeys from a locker that I liked but personally picked them up once and was appalled by the stank and filth at the locker.
I smoke cheese and it is nothing but nasty the first week or two but then mellows out and is delish.

Definitely tastey!
Actually I set aside and smoke the legs and wings of the turkeys I can.
